Indeed a beautiful and inspiring story. It’s very difficult living in a Hispanic household. Growing up I had a constant battle with my self and my body due to the selfish remarks of other specially those closest to me. I was never tall or skinny enough, or even fat enough, but that was just it! For everybody else I just wasn’t enough. Even though I didn’t struggle with an eating disorder I can fully understand the inner struggles that you went through and I am so happy that you are where you are today! I also had to change my way of living and thinking. I have done a vegan diet in the past and I am hoping to start and continue one again in the near future. Thank you for sharing your story with us ????

Hope to see you one day on the Food Network with your own show. There is definitely a demographic of individuals looking to educate themselves on veganism and the benefits of a plant based diet. We need more awareness on it.
