It’s simple to make, requires easy-to-find, affordable ingredients, and can be customized to suit your taste buds! The perfect homemade drink for a birthday party, baby shower, graduation party, and summer BBQ. You won’t regret it.

Ingredients You’ll Need 

  • Strawberry syrup: Our homemade simple syrup is made with fresh strawberries and is the source of both sweetness and the strawberry flavor in this strawberry mocktail recipe. If preferred you can opt for a store-bought strawberry syrup but we cannot guarantee the flavor will be the same. 
  • Lime juice: For the best depth of flavor, use freshly squeezed lime juice. Pre-bottled lime juice is not as tart or sour tasting.
  • Fresh mint: Nothing beats fresh mint in a mojito recipe! We typically like to use 5 large mint leaves per mocktail. Feel free to adjust to your personal taste and don’t forget additional fresh mint for garnish.  
  • Lime seltzer: We find lime-flavored seltzer waters to compliment and enhance the flavors in this strawberry mocktail but truly any seltzer or tonic water will do. Use what you have! 
  • Fresh strawberries: ​Fresh fruit is optional, but does make for a beautiful garnish. Take your homemade mocktail to the next level and add a fresh strawberry to the rim!

Add-ins and Variations 

  • Pitcher-sized option: Serving a crowd? Make a pitcher-sized version of this strawberry mocktail! Instead of muddling the fresh mint in an individual drinking glass, add it to the bottom of your favorite serving pitcher and muddle directly in the pitcher. For a 64-ounce pitcher you will need: 6 ounces of strawberry syrup, 2 ounces of fresh lime juice, 40 large mint leaves, and about 4 cups of seltzer. Add lime seltzer right before serving! 
  • Add fresh strawberries: ​Swap some of the ice with frozen strawberries! This will not only be pretty looking but keep your drink cool without watering it down, too.
  • Use another fresh herb: ​Mint is classic in any mojito recipe. If mint is not your favorite, try muddled fresh basil leaves.

How to Make a Strawberry Mojito Mocktail

  1. Muddle the mint leaves. In a small serving cup such as a highball glass, add the strawberry syrup, lime juce, and fresh mint leaves. Using a cocktail muddler or the end of a wooden spoon, gently muddle the mint for 30 seconds. Once ready, the juices from the fresh mint will be released and aromatic. 
  2. Add ice and top with seltzer. Mix the strawberry mocktail ingredients together gently, then garnish the rim of the glass as desired and a sprig of mint. Enjoy immediately while chilled!

are mocktails non-alcoholic?

A mocktail and virgin cocktail are terms used to describe drinks that are 100% free of alcoholic. It’s essentially the equivalent of drinking a sweet strawberry juice with fresh herbs!

are strawberry mocktails suitable for kids?

This non-alcoholic drink is suitable for kids. If your kids prefer a sweeter bubbly drink, swap the lime seltzer water with Sprite or 7-UP.

what can i serve with strawberry mocktails?

These mocktails pair well with a variety of our favorite dishes, but are especially perfect for summer gatherings and cookouts. We recommend serving with easy appetizers like Guacamole and Homemade Tortilla Chips. You can also try main dishes like Tofu Fajitas or Carne Asada Tacos.

can i turn this mocktail into a cocktail?

If you’re of drinking age and want to turn this strawberry mocktail into an alcoholic cocktail, add 2 ounces of light rum or silver rum of choice then top off with the lime seltzer water. Enjoy!

make ahead options

If you are prepping this strawberry mocktail ahead for a crowd, there are a couple of things you can do to prepare in advance and make day of as simple and easy as possible. 

​For starters, our Strawberry Syrup can be prepped and refrigerated a few days ahead of time. Store in an airtight jar until ready to make your strawberry mocktail.

Second, the lime juice can be squeezed up to 24 hours in advance (This is especially helpful if making a pitcher-sized strawberry mocktail!). 

Lastly, prep your garnish! Feel free to cut your lime wedges or slices and strawberry slices up to 24 hours in advance and store them in separate airtight containers until ready to serve. 

The one ingredient we wouldn’t suggest prepping in advance is muddling the mint. The leaves will quickly brown and while they will taste fine, they won’t have the prettiest presentation. Some things are just best fresh!

Storage Instructions

Store any leftover strawberry mocktail in an airtight container in the fridge for up to 24 hours. The seltzer water will become flat, but it will still be drinkable!

Nothing’s better than a sweet, homemade strawberry syrup in the middle of summer! Use it as a strawberry pancake syrup, ice cream topper, or sugar substitute in your favorite beverages. All you need is 2 basic ingredients!

Once the peak of strawberry season hits, we’re always looking for ways to use up extra strawberries. This strawberry simple syrup recipe is the easiest way to use them up and is our current favorite way to sweeten up summer mocktails and brunch recipes. 

It’s a great alternative for classic simple syrup or really any sweet syrup. Skip the store-bought versions at the grocery store this year and make your own fresh strawberry simple syrup from scratch with just a couple of simple ingredients. No citric acid, no artificial flavorings, and no high fructose corn syrup – just a 100% natural, sweet strawberry flavor!

Ingredients You’ll Need 

  • Strawberries: Fresh strawberries have a naturally sweet, juicy flavor that’s perfect for sweetening a simple syrup. It also turns this homemade strawberry syrup a vibrant reddish pink without the need for any food coloring! For this recipe, we highly recommend using the ripest, sweetest strawberries you can find. The sweeter the strawberries, the better flavor your strawberry simple syrup will have!
  • Sugar: In order to let the strawberry flavors shine, we used white, granulated sugar. It has a great neutral flavor and melts seamlessly into the syrup. If vegan, opt for organic sugar. Our favorite is Wholesome Sweet’s Organic Fair Trade Cane Sugar

Equipment Needed

How to Make Strawberry Syrup

  1. Cook the strawberries and sugar. In a pot over medium heat, add the sugar and chopped strawberries. Cook for about 10 minutes, stirring constantly, until thickened and syrup-like. 
  2. Strain. Place a fine mesh strainer over a medium-sized heat-proof mixing bowl. Pour the hot strawberry simple syrup into the strainer. Mix gently with a cooking utensil until a majority of the syrup liquid has separated from the fruit pulp. 
  3. Cool, then serve. Allow the strawberry simple syrup to cool to room temperature. As it cools, it will continue to thicken. Then, use as desired.

Serving Suggestions 

We originally developed our homemade strawberry syrup to pair with this Strawberry Mojito Mocktail, but this syrup can be used for much more than mocktails and cocktails. 

variations

If you’re out of fresh strawberries or don’t have quite enough to make a full 3/4 cup, replace the strawberries with similar fresh berries.

  • Blueberry syrup: Blueberries are more tangy than strawberries and will make a slightly more tart syrup. 
  • Raspberry syrup: The most tart of the bunch! If using raspberries, you may need additional granulated sugar to sweeten to taste. 
  • Mixed berry syrup: Use a mix of raspberries, blueberries and strawberries for a sweet and tangy variation.

Recipe FAQs

can i use frozen strawberries?

Yes, if strawberries aren’t in season or you only have frozen on hand, they can be substituted 1:1. Note that frozen strawberries contain more excess moisture and will likely need to be simmered for longer to thicken. 

how do i thicken my strawberry syrup?

If you’ve simmered your syrup for 10-15 minutes and it still hasn’t thickened, you can stir in a cornstarch slurry to help. Start with 1-2 teaspoons of cornstarch mixed with 2-4 teaspoons of water and stir it into the syrup while simmering. Continue to cook until a thicker syrup is achieved. Keep in mind that the syrup will continue to thicken as it cools so don’t make it too thick! 

how much syrup does this recipe make?

This recipe will make about 1/3 cup of syrup but will depend on how well you strain the strawberry pulp. If you need additional syrup, double or triple the recipe as needed.

what can i make with the leftover pulp?

Great question! The leftover strawberry puree made from straining the liquid can be reserved and used in any recipe you’d otherwise use a strawberry jam. Slather it on a slice of buttered toast, add it on top of crepesrye waffles, or buttermilk pancakes, or use it to fill our homemade vegan pop tarts!

Storage Instructions

Then, when ready to use, transfer the frozen syrup to the refrigerator until liquid again. Enjoy as usual. 

Homemade strawberry simple syrup is perishable and must be stored in the refrigerator. When stored in an airtight container such as a glass mason jar, this homemade syrup can last for up to 1 week. 

If needed, it can also be frozen for up to 2 months. To freeze, allow the syrup to cool completely then transfer to a freezer-safe container or pour into an ice cube tray and freeze in small cubes.

  • 1/4 cup + 2 tbsp granulated sugar

Instructions

  1. In a pot over medium heat, add the sugar and strawberries. Cook for about 10 minutes, stirring constantly, until syrupy. The mixture may bubble a bit but if it rises too much, the heat may be too high, so lower the heat as needed.
  2. Set a mesh strainer over a medium-sized bowl and pour in the strawberry liquid. Allow the mixture to strain, mixing gently with your cooking utensil until the liquid and solids have separated. Set aside to cool.
  3. Don’t toss the pulp! You can use it just as you would a strawberry jelly– in oatmeal, on toast, in baked goods, on pancakes, etc.

This Easy Vegan Horchata is our favorite homemade horchata recipe! It’s naturally sweetened with dates, made creamy with rice milk and almond milk, and requires just 25 minutes of prep. You won’t miss the dairy milk!

Is horchata originally dairy-free?

It depends on the region! This horchata is inspired by the Mexican version most popular in the United States, but horchata became popular in southern Spain. The Spanish version is made a creamy texture using chufas or tiger nuts and is typically made creamy without any dairy. 

The Mexican version of horchata is typically made creamy using dairy products such as condensed milk, evaporated milk, or whole milk, but it’s not uncommon for traditional versions to be made plant-based with almond milk in place of cow’s milk.

If you’ve never tried a dairy-free horchata, we think you’re going to love this vegan horchata and won’t miss the milk at all! Ingredients You’ll Need 

  • White rice: Authentic horchata is typically made with long-grain white rice. Once soaked, it becomes smooth, and creamy, and is easy to blend into homemade rice milk. If you’re out of white rice, Arborio rice is another common choice, though we haven’t personally tried it ourselves. 
  • Cinnamon sticks: For the best flavor and hint of cinnamon, we recommend using both whole cinnamon sticks and ground cinnamon. If you only have whole cinnamon sticks, follow this simple tutorial to learn How to Make Ground Cinnamon from Cinnamon Sticks. 
  • Medjool dates: We wanted this homemade horchata to not only be made vegan but refined-sugar-free, too. We typically make ours with 1/2 cup of packed, pitted dates, but if you prefer a sweeter horchata use up to 3/4 cup.
  • Unsweetened almond milk: We used our Homemade Almond Milk (made without the added dates), but any plant-based milk of choice will work great here. If you prefer your homemade vegan horchata extra rich and creamy, use coconut milk or oat milk.
  • Vanilla: While optional, a splash of pure vanilla extract adds additional sweetness, depth of flavor and enhances the flavor of cinnamon. Fresh vanilla paste would be amazing, too!  

Equipment Needed

  • High-speed blender 
  • Strainer or nut milk bag
  • Airtight glass container (for storing)

How to Make Vegan Horchata

  1. Soak the rice. In a large blender, add the rice, cinnamon sticks, pitted dates, and cover with 4 cups water. Allow the mixture to sit for 6-8 hours, or overnight. 
  2. Blend until smooth. After 6-8 hours of rice soaking, add the remaining 2 cups of water and blend for 2 minutes, or until completely smooth. 
  3. Strain. Pour the sweet Mexican rice milk through a fine mesh sieve, strainer, or nut milk bag. Strain the vegan horchata as best you can. If using a nut milk bag, we recommend keeping a tight grip on the top of the bag to prevent any liquid or pulp from coming out the top off the bag. 
  4. Blend with almond milk. Once the vegan horchata mixture is sufficiently strained, discard or set aside the remaining pulp and place the smooth, creamy mixture back into the blender. Add the almond milk, salt, and vanilla and blend until well combined. 
  5. Serve. This Mexican horchata recipe can be served immediately over ice in a tall glass or mug, or transfer the horchata to an airtight container and chill in the refrigerator until cold. Enjoy!

Serving Suggestions 

A typical Mexican horchata is served over ice with a sprinkle of cinnamon and additional cinnamon sticks for garnish. It’s a versatile drink that can be served for breakfast or dessert and pairs well with several of our vegan recipes. Here are a few of our personal favorites for serving this sweet beverage:

Is horchata good for you?

It depends on the recipe. Most traditional horchata recipes call for a lot of cane sugar to sweeten the creamy beverage. This version, however, is sweetened with Medjool dates and is much better for you. If you’re looking for a healthy, homemade, vegan horchata, this is the best recipe to try! 

can I spike my homemade vegan horchata?

Yes! To make a boozy horchata add 1-2 ounces of liquor per cup of horchata. Rum, vodka, Blanco tequila, or vegan coffee liqueur are all delicious choices. 

can I make vegan horchata in a food processor?

While we prefer using a high-speed blender, the rice milk mixture can be blended in a large cup food processor until smooth. Be careful to not overfill the food processor with liquid – most food processors have a max fill line for liquids. 

what can i do with the leftover rice pulp?

Great question! The leftover rice pulp from the vegan horchata can be discarded and composted or made into a delicious creamy rice pudding. To make vegan rice pudding, add about 1 cup of the rice pulp to a small pot. Add in 1 cup of almond milk or another plant milk and stir well to combine. Cook over medium-low heat until the mixture becomes rich and creamy. Enjoy immediately while warm with additional cinnamon to taste.

storage instructions

This vegan horchata will keep for up to 3 days in the fridge. For best results, store in an airtight container such as a tall mason jar or sealable pitcher. 

Leftover horchata can also be frozen. To freeze, pour the horchata into an ice tray or freeze directly in a wide-mouth mason jar. If freezing in a jar, keep the liquid below the “freezer” line. Freeze for up to 3 months, then thaw completely in the refrigerator. Before enjoying again, blend again until smooth and well combined.

Ingredients

  • 1 cup white rice
  • 2 cinnamon sticks
  • 1/23/4 cup pitted Medjool dates
  • 4 cups hot water
  • Optional: Pinch of salt
  • 2 cups unsweetened almond milk (or non-dairy milk of choice)
  • 1 1/2 teaspoons pure vanilla extract
  • Ice cubes, to serve

Instructions

  1. In a large blender, add the rice, cinnamon sticks, pitted medjool dates, and 4 cups of hot water. Allow it to sit for 6-8 hours or overnight.
  2. Add the remaining 2 cups of water and blend for 2 minutes or until smooth.
  3. Pour the blended liquid into through a fine mesh strainer or nut milk bag and strain out the liquid as best you can. If you are using a nut milk bag, make sure you constantly grip the top to prevent any liquid or pulp from being expelled upward. Discard pulp.
  4. Once strained, add the liquid back into the blender and blend in the almond milk, salt, and vanilla.
  5. Transfer the mixture to an airtight container and chill in the refrigerator or serve immediately over ice.

Notes

  • This will keep in the fridge for about 2-3 days.
  • You can also alternatively use a cheesecloth, a very thin towel, or a clean t-shirt.
  • After putting together the recipe, you are going to be left with rice pulp. If you would like to reuse it, add the pulp (roughly 1 cup) and about 1 cup of almond milk to a pot and cook over medium-low heat until it becomes a creamy and rich rice pudding!

Many strawberry lemonade recipes on the Internet are made with sweeteners such as white sugar, simple syrup, agave nectar, coconut sugar, or even strawberry syrup. We wanted to make a version that was not only good but nutritious, too!

This strawberry lemonade is made with fresh strawberries and sweetened with dates, making it a great source of dietary fiber and a drink you won’t think twice about making a double batch of. It’s the best delicious drink to make for strawberry season, a hot summer day, or celebrations such as birthdays, picnics, Mother’s day, Easter, baby showers, and more!

Ingredients You’ll Need 

  • Lemons: In order to make the best homemade lemonade, it is essential to juice your own fresh lemons! From our experience, 2 Meyer lemons should yield about 1/4 cup of fresh lemon juice, but this will depend on the size of the lemons as well as the method in which you juice them. For example, squeezing the lemons by hand is going to yield less juice than using a citrus juicer.
  • Water: You will need 3 cups of fresh, filtered water to dilute the tartness of the lemons and help blend the lemonade completely smooth.
  • Fresh strawberries: For the best flavor, use extra ripe strawberries. The riper they are, the sweeter your strawberry lemonade will be (without the need for any cane sugar!).

How to Make Homemade Strawberry Lemonade 

  1. Blend all ingredients! Place the water, diced strawberries, Medjool dates, and lemon juice in a high-speed blender and blend until completely smooth, about 1-2 minutes.
  2. Strain. Pour the mixture through a fine mesh strainer to remove any date pulp. This is not necessary but highly recommended for smooth lemonade.
  3. Chill for 1 hour. Transfer the strawberry lemonade to an airtight container such as a large pitcher, mason jar, or your favorite glass serving container, and add in the sprigs of fresh mint if using. Tightly cover and refrigerate for 1 hour or until cold.
  4. Serve. Serve chilled over ice with additional sprigs of fresh mint, sliced lemons, strawberries, or as desired!

  • Use a high-powered blender. Although you can get away with a low-powered blender for many of our recipes, this is one where you’ll want to use a quality, high-powered blender such as a Vitamix. Your new favorite summer beverage–an easy and refined sugar-free strawberry lemonade that is sweetened with dates and made with just 4 simple ingredients!


Ingredients

  • 3 cups filtered water
  • 1 cup (140g) diced strawberries
  • 1/4 cup (50 g) medjool dates*
  • Juice of 2 lemons (about 1/4 cup or to taste; we used Meyer)
  • Optional: 2-3 sprigs of fresh mint

Equipment

    • Large storage containers, such as a pitcher, mason jar, or similar container


Instructions

  1. In a high-speed blender, blend all of the ingredients together (except for the mint) until smooth, about 1-2 minutes.
  2. Pour the mixture through a fine mesh strainer to remove any date pulp. This is not necessary but highly recommended for smooth lemonade.
  3. Transfer into an airtight container and add in the sprigs of mint if using. Seal and place into the refrigerator for 1 hour or until chilled.
  4. Serve over ice.

Notes

  • If your dates are not soft, soak them in hot water for about 20 minutes or until softened, and drain before use.
  • Add more dates if you want the lemonade sweeter!

Ingredients You’ll Need 

  • Dutch processed cocoa powder: Unlike regular cocoa powder, Dutch processed cocoa powder has been treated with an alkalizing agent that helps neutralize the acidity, increased its solubility and reduces the bitterness. It’s also a darker, richer brown color and makes for a richer colored hot chocolate mix. 
  • Sugar: ​We like to use coconut sugar because it’s a bit more nutritious than regular granulated sugars and adds a natural caramel undertone to the hot chocolate. 
  • Chocolate chips: To keep this homemade mix vegan and dairy-free, opt for dark chocolate chips. One of our favorite brands is EnjoyLife because it’s always vegan and allergen friendly. 

Possible Ingredient Substitutions

  • Cocoa substitutes: ​Swap the Dutch processed cocoa powder for regular cocoa powder or cacao powder.
  • Sugar substitutes: Replace the coconut sugar with light brown sugar or granulated cane sugar as needed. Using liquid sweeteners is not recommended as doing so will make this homemade mix perishable. 
  • Chocolate chip substitutes: If you don’t have access to dairy-free dark chocolate chips at your local grocery store, swap them out for a chopped dairy-free, dark chocolate bar. Or as a last resort, make your own Homemade Vegan Chocolate Bar from scratch!

How to Make Homemade Hot Chocolate Mix

  1. Process the chocolate ingredients into a powder. Add the cacao powder, coconut sugar, dark chocolate and salt to a food processor or blender. Blend all of the ingredients together until uniform. 
  2. Transfer to an airtight jar. Carefully transfer the chocolate powder to an airtight container such as a mason jar.
  3. Top with marshmallows. ​Fill the remainder of the jar with mini marshmallows, if desired. 
  4. Seal tightly. When making a homemade mix, it’s very important to store in an air-tight container. If the chocolate and marshmallows are exposed to air, they will dry out and spoil much faster.

How to Make Homemade Hot Chocolate Recipe

  1. Combine the hot chocolate mix and milk. ​In a medium pot over medium heat, whisk 3 tablespoons of the hot chocolate mix with 1 cup of non-dairy milk of choice.
  2. Bring to a low boil. ​Heat the hot chocolate, uncovered, until it heats to a low boil. 
  3. Remove from the heat. Once the warm milk begins to boil, remove the hot chocolate from the heat, whisk well to combine, then pour into your favorite mug. 
  4. Serve. Garnish your creamy hot chocolate with your favorite topping ingredients (like So Delicious CocoWhip!) and enjoy immediately while hot.

what is the difference between cocoa powder and hot cocoa mix?

Cocoa powder is pure, unsweetened chocolate that has been ground into a powder form. Hot cocoa mix, on the other hand, is typically cocoa powder mixed with sugar. For this reason, the two cannot be used interchangeably. 

​is hot cocoa better with milk or water?

Traditional hot chocolate is very rich and indulgent. This hot cocoa mix can be made into hot chocolate using either milk or water, but if you want a rich, indulgent flavor, we highly recommend using milk.

Ingredients

  • 3/4 cup (75g) dutch processed cocoa powder (regular cocoa powder or cacao powder work as well)
  • 1/2 cup (120g) coconut sugar (or sub sugar of your choice)
  • 3 tablespoons (1.2 oz) dark chocolate chips or chunks
  • Optioanl: Pinch of salt

We like to serve it with:⁣


Instructions

  1. Chop the dark chocolate into small chunks if needed. Add the cacao powder, coconut sugar, dark chocolate and salt to a food processor or high speed blender and blend all of the ingredients together until uniform.
  2. Carefully transfer to an air-tight container or mason jar and top it with marshmallows. You may need 1 to 2 jars depending on the size you use. I used a 16 oz jar, and had some leftover to fit in an 8 oz jar, so it was about 24 oz total.
  3. To serve: In a medium pot over medium heat, whisk 3 tablespoons of the mix together with 1 cup non-dairy milk. Heat just until it comes to a low boil. Remove it from heat and serve with a big dollop of So Delicious Cocowhip and garnishes of your choice. Enjoy!
